Chocolate mousse recipe

Ingredients
- 3 eggs
- 1/10 l (10 cl) of water
- 10 g of powdered skimmed milk (1 well filled tablespoons)
- 30 g of sugar-free cocoa
- Sweetener*
- 1 pinch of salt
Preparation
Separate the whites from the yolks
In a bowl, mix the egg yolks, the cocoa, the skimmed milk (water + powdered skimmed milk) and the sweetener
Thicken on the hotplate with a double boiler
When the mixture is smooth, remove from the stove and let it cool down
Beat the egg whites until stiff with a pinch of salt and add them delicately to the chocolate cream
Put in the fridge for 4h
*Use the thermostable sweetener if it’s used for cooking. If you do not wish to use a sweetener, you can use fructose sugar (400 kcal for 100 g ) or agave powder (392 kcal for 100 g). They have a stronger sweetening power for a lower amount used so they are less caloric.
