Ingredients
- 200 g of fish flesh of your choice (or 200 g of peeled ad cooked shrimps + 100 g of Saithe)
- 1 egg white
- 25 g of shallots
- 25 g of 0% fat cream cheese
- 2,5 cl of dry white wine
- Butter to coat the moulds (not necessary if you have silicone moulds)
- Salt, pepper
Preparation
Coat with melted butter 8 timbale moulds or soufflé dishes
Prepare the mousseline
Chop the raw fish with the shallots
Add the beaten egg whites
Season with salt and pepper
Pour in the crème fraîche little by little, beating the mixture
Add the white wine and mix
Spread the preparation in the moulds
Cook for 15 min in a bain-marie
